Introduction
Tomato and basil are a well-known Mediterranean combination that brings a richness of flavor. To enhance the pizza with Mediterranean notes, we recommend cherry tomatoes and basil–pistachio pesto. However, the essence of this recipe lies in the almond-flour crust, which has an excellent taste and texture, while the toppings are, of course, a matter of personal preference.

Ingredients
For the dough:
- 1 egg
- 170 g shredded mozzarella
- 2 tbsp cream cheese
- 85 g almond flour
For the topping:
- 2 tbsp basil and pistachio pesto
- 4–5 slices of ham or pepperoni
- 50 g grated cheese
- 10–15 cherry tomatoes
- Oregano
Instructions
Step 1:
Beat the egg and mix in the almond flour.
Step 2:
Melt the shredded mozzarella and cream cheese in the microwave (or in a pan) and combine.
Step 3:
Add the melted cheeses to the egg and almond-flour mixture and mix well by hand.
Step 4:
While the dough is still warm and pliable, spread it evenly with your fingers over baking paper in a round pizza tray.
Step 5:
Bake for 5–10 minutes at 200 °C (392 °F), until the crust lightly browns.
Step 6:
If bubbles form in the dough, prick them with a toothpick.
Step 7:
Spread pesto over the crust, then arrange the ham and halved cherry tomatoes, and sprinkle with grated cheese and oregano.
Step 8:
Bake for a few more minutes until the cheese melts.
